A University of Missouri Extension dairy specialist is highlighting Missouri’s $3 billion industry during the state’s June Dairy month.

“We have, as an industry, seen a massive increase in butter consumption,” Bluel said. “A 40-year high.”
She tells Brownfield the upward trend in butter consumption has led to medical studies on the product’s impact on consumer health.
“And they’re realizing, through peer-reviewed research that was published a couple of years back, talking about how there’s actually a reduced risk for type 2 diabetes and a reduced risk for cardiovascular issues when dairy is part of your diet.”
Bluel said butter consumers have a four percent reduced risk for type 2 diabetes compared to margarine consumers.
