The University of Missouri is building two mobile training units to teach skills required in meat processing businesses.
Bryon Wiegand, director of the MU Animal Sciences Division says there’s a shortage of labor that these units will help address and they’ll get to move all over the state.
“For lack of a better word, or maybe something you can identify with, it’s essentially a hot dog plant on wheels. We have an opportunity to teach further processing in that.
