Most dairy product production was down on the year for the month of August while cheese saw a slight increase.
Total cheese production totaled more than 1.14 billion pounds, up 4.4 percent on the year and marginally below the prior month. Italian cheese production was up nearly nine percent on the year and slightly on the month while American cheese was up 1.5 percent on year and down slightly more than three percent for the month.
